Keto-Friendly Thanksgiving Stuffing

If you have a roast turkey on the menu this Thanksgiving than this keto-friendly stuffing is perfect to accompany it! Traditionally stuffing is generally high in carbohydrates and made with gluten, something that many of us have trouble with. The good news is, that if you’re someone that is sticking to a low carb diet (such as keto) or avoiding gluten and grains, there’s no need to give up or avoid stuffing anymore. This keto stuffing is a yummy addition to your Thanksgiving feast, full of traditional flavors and wonderful textures it will be sure to please even the fussiest of eaters.

 

1          Tbsp                            Coconut oil

6          Oz                               Organic uncured bacon, diced

1          Med                             Onion, peeled and finely chopped

4          Cup                             Cauliflower rice

2          Cup                             Celery, sliced

1          Lg                                Turnip, peeled and diced

1 ½      Cup                             Walnuts, coarsely chopped

½         Cup                             Pine nuts

2          tsp                               Parsley, finely chopped

1          tsp                               Thyme, leaves (fresh)

2          tsp                               Sage, finely chopped

1          tsp                               Celtic sea salt

Black pepper, freshly ground

2          Cup                             Chicken broth

 

 

  1. Melt the coconut oil in a large heavy skillet or large saucepan over medium to high heat. Add the bacon and sauté for 5 minutes, then add the onion and continue to sauté until onion is soft.
  2. Add the cauliflower rice, celery, and turnip and cook for 2 – 3 minutes, stirring often.
  3. Add the chopped walnuts and pine nuts, cook for a further 5 minutes stirring often, then add in the herbs and seasonings; mix through.
  4. Pour in the chicken broth, bring to a boil, then lower heat and allow to simmer uncovered until all the liquid is fully absorbed, approximately 20 – 30 minutes.
  5. This recipe should be enough to stuff a 15lb turkey.
