Scalloped Potatoes

Vegans can enjoy scalloped potatoes again with this recipe!

Ingredients:

  • 4 medium potatoes
  • 1-1/2 cups soy milk
  • 2 tablespoon flour
  • 1 teaspoon sea salt
  • 1 garlic clove, crushed
  • 1/2 teaspoon cayenne pepper
  • 1 medium onion, chopped

Steps/Methods:

  1. Preheat oven to 350F/180C.
  2. Peel and slice potatoes thinly.
  3. In a saucepan, combine soy milk, flour, salt, garlic and cayenne. Cook over medium heat until sauce thickens.
  4. Add onions to sauce.
  5. Layer a casserole dish with half of the potato slices.
  6. Spoon half of sauce over the slices. Repeat process with remaining potatoes and sauce.
  7. Cover and bake for 65 minutes.
