This Lemon Yogurt Haddock Filet recipe is a delightful combination of zesty lemon and creamy yogurt, making it a perfect dish for a light and flavorful dinner.

Ingredients:

For the Lemon Yogurt Marinade:

  • 1 cup plain yogurt
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Haddock Filets:

  • 4 haddock filets (about 6-8 ounces each)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

1. Prepare the Lemon Yogurt Marinade:

In a mixing bowl, combine the plain yogurt, lemon zest, lemon juice, minced garlic, olive oil, dried oregano, salt, and pepper. Mix everything well until you have a smooth and creamy marinade.

2. Marinate the Haddock Filets:

Beef and chicken usually star in taco dishes, so try this break from tradition. The cilantro and garlic shrimp is mouthwatering and will soon become a staple taco filler. Celebrate Cinco de Mayo with these yummy shrimp tacos.

Ingredients for Shrimp Tacos

1 small bunch cilantro (20g)
5 cloves garlic
1 bunch green onions, chopped
1 bag of large shrimp (30-40 shrimp)
2 cups sliced mushrooms (Chef's Note: I use mini bellas)
Organic canola or grapeseed oil

Fixings

Romaine lettuce for the shell or Organic Corn or Gluten-free Tortilla wraps or taco shells
Diced tomatoes
Shredded lettuce
Shredded cheese or non-dairy alternative
Sour cream or non-dairy substitute
Salsa or guacamole of choice

Directions

In a food processor/chopper grind the garlic and cilantro. Heat oil in a pan on med/high heat. Add green onions and garlic/cilantro mix. Add mushrooms and sautée while mixing periodically for about 10 minutes. Remove from heat, place in a bowl and cover.

Reduce the heat to low/med and add the shrimp. Cook until both sides become pink. Add the veggie and cilantro mix back into the pan and mix well. Cook covered, mixing periodically, for 4-5 minutes.

Warm up tortillas and top with fixings and shrimp. Enjoy!

Enjoy this simple, exotic vegetable soup recipe full of immune supporting vegetables and warming Thai flavors. The wide variety of vegetables in this dish make it a wonderfully colorful addition to your dinner table and one rich in antioxidants. Make extra and have it for leftovers–guaranteed it won't last long!

Ingredients you will need

1 tablespoon Barlean's Organic Coconut Oil

1 bunch of chopped green onions

1 1/2 cups of quartered mushrooms of your choice

1 cup of sliced shitake mushrooms

1 cup coconut milk

2 tablespoons of chopped, fresh cilantro (optional)

1 bunch of fresh Thai basil (you can substitute with regular basil)

1/2 to 1 cup of sliced carrots

2 cups bok choy or baby bok choy

8 cups of vegetable broth or chicken broth

1 tablespoon of Srirracha chili sauce

2 eggs, beaten

pinch of Mercola's Crystal Cooking Salt (or to taste)

Optional: add in sliced red pepper, lemongrass, cauliflower or any other vegetables you like.

Instructions

In a large pot, heat the coconut oil. Sauté the green onions, quartered mushrooms, sliced shitake mushrooms, cilantro, thai basil, sliced carrots, and bok choy for a few minutes. Any combination of vegetables work well in this recipe. Experiment to find your favorite combination. Add broth, coconut milk, and Sriracha chili sauce.

Lower heat and simmer for 45 minutes, or until all the vegetables are soft. Approximately 10 minutes prior to serving, add 2 beaten eggs and mix. Season to taste with more salt and freshly ground pepper, and garnish with a few sprigs of cilantro or basil, if desired. Serve immediately.

Note:Feel free to use any combination of vegetables in this soup. Make a large pot and freeze leftovers in freezer-safe glass containers.

If you love a great burger and aren't much of a carnivore, try these delicious Meatless Mediterranean Tofu Patties! You can use them as burgers or meatballs, and they're a great meatless option that pack quite the flavorful punch.

Ingredients:

1 pack of organic medium tofu (put through the food processor)

1 teaspoon garlic powder

2 tablespoons dried basil

2 tablespoons dried oregano

2 tablespoons grated Parmesan

1 teaspoon black pepper

1 egg

3 tablespoons of organic bread crumbs

Directions:

  1. Process tofu in food processor. Add remaining ingredients in a mixing bowl and combine well.
  2. Allow mix to set in the fridge for at least 30 minutes or up to 24 hours.
  3. Hand roll patties into balls, pat down.
  4. Preheat oven to 400 degrees.
  5. Bake for 15 minutes then flip and bake for another 15.

Serve as you would a burger or you could make them smaller as meatballs or sliders.

Ingredients, Part 1:2 pounds organic stewing beef (cut into bite size pieces)

1 tablespoon Dijon mustard

Directions: Heat some olive or coconut oil in a large deep pot, and add the ingredients above. Mix and sear the beef.

2 cups lima beans

1 tablespoon minced garlic

2 tablespoons ground sage

1 tablespoon celery salt

4 cups organic beef broth

4 cups organic chicken broth

Grilled Wasabi Shrimp Sushi Wraps

If you're looking for something a little out of the box, try these amazing and delicious wraps! If shrimp is not on your menu, try substituting with chicken or organic tofu.

Shrimp Sauce Ingredients1/2 cup San-J Tamari

1 tsp minced garlic

Jumbo shrimp (bag of 16-20)

Nature's Flavors Organic Wasabi flavor powder, to taste

Mix ingredients well and let sit for 30 mins. Place shrimp on grill and flip after one minute. Then drizzle the sauce evenly over the shrimp.

Toppings

1-2 mini cucumbers, cut matchstick-style

1 sliced avocado

1 carrot, shredded

1 cup of sliced shitake mushrooms (lightly salted and drizzled with olive oil – for best results cook on the grill with shrimp)

3 chopped green onions (try cooking on the grill with the mushrooms – lightly salted and drizzled with olive oil)

2 sheets of Nori, crumpled by hand

Sushi ginger

1 cup rice or quinoa

Place all toppings in separate bowls on the table (fajita style). Serve shrimp with the cooked mushrooms and onions. Use soft tortillas or rice wraps – you can choose whatever you like.

One of the best ways to avoid added sugar and Scary Seven ingredients is to make your own pasta sauce! The yummy tomato aglio olio (garlic oil) is the perfect complement to grass-fed meatballs.

Ingredients

1 lb extra lean grass-fed organic ground beef

1 whole garlic

1 bunch fresh basil

1 tbsp Maison Orphée grapeseed oil

1 sweet onion, chopped

8 oz mushrooms, sliced

2 cups diced tomatoes (or 1 can diced tomatoes)

2 tbsp dried oregano

1 tbsp Italian spices

3-4 oz chopped spinach

1 tsp crushed red pepper

2 tsp sea salt

¼ cup Maison Orphée organic olive oil

1 packaged whole wheat spaghetti, broken in half

¼ cup organic Parmesan cheese (optional)

Directions

Roll ground beef into little meatballs, about the size of large marbles. Pan fry meatball with no oil. Once they begin to brown on all sides, remove from heat.

In a chopper or or food processor, chop garlic, basil. Heat grapeseed oil on medium heat in a deep pan. Add the garlic and basil. Add onion, mushrooms, tomatoes, oregano, Italian spice, spinach, red pepper, sea salt and olive oil. Lower heat and simmer.

Cook pasta according to package directions. Place cooked pasta in a large bowl and pour veggie and oil mixture over pasta. Mix well. Serve with meatballs and Parmesan cheese.
